442. [MEXICAN COOKBOOK]. MONTES DE OCA, Juanita. “Libro de cocina para el uso de Da. Juanita Montes de Oca Año de 1844.” leaves written in ink on both sides. 8vo (22 x 16 cm), original wrappers with original stitching. Wrappers moderately foxed and stained. Except for light to moderate foxing, interior is very good and written in a legible hand. Last page ends in mid-sentence, but that recipe is in another hand.
A nice example of a mid-nineteenth century Mexican cookbook emphasizing traditional recipes. Among them are ensalada reyena, guizado de pichones en adobo, pecados rellenos, guizado para toda ave, pasta de sidra, and mamones. One international recipe, sopa francesa, is included. Despite its brevity, the cookbook seems to be designed so that one could fix several types of meals from soup to nuts by alternating combinations.
